Carrie's Pumpkin Patties

This is an interesting recipe.
Part of us really like it and part of us do not!
That is unusual for our family. I would say if you like
salmon patties or crab cakes you would like this.

CARRIE’S PUMPKIN PATTIES
2 Slices of firm sandwich bread dried and crumbled
Chopped Italian parsley
¾ c. Grated sharp Cheddar or Monterey Jack Cheese
1 ½ t. oil
¾ c. finely chopped onion
¾ c. finely chopped green or red pepper
¾ c. Frozen corn kernels
1 ½ t. Minced garlic
1 t. Chili powder
1 t. Cumin
1 Egg
1/3 c. Mashed Pumpkin
1/3 c. Ricotta
½ t. Salt
½ t. Coarse Ground Pepper
2 T. Butter

In a medium bowl, mix together the crumbled bread, parsley, bread crumbs, and cheese. Set aside. Heat the oil in a skillet. Add veggies. Sauté until soft. Mix in garlic, chili powder and cumin. Heat for an extra minute. Remove from the heat cool slightly.
Spoon the contents into the bread crumb mixture. In another bowl, mix egg, pumpkin and ricotta. Mix in the bread crumb mixture. Mix completely. Season with salt and pepper. Shape mixture into 6, ¾ in thick patties (about 1/3 c. of the mixture each) Roll patties in bread crumbs and refrigerate them for about 1 ½ hours. Melt the butter in a large skillet. Transfer the patties to the skillet and fry them over medium heat until they turn golden brown, about 4 minutes on each side. Remove them from the skillet and serve right away.

Pumpkin Black Walnut Muffin


New 2008 Recipes

Winter is the time to try ideas.
This one is great !!!! All who have tried this one gave a thumbs ups.

PUMPKIN BLACK WALNUT MUFFINS
Walnut Topping:

3 T. Butter
1/3 c. Flour
3 T. Brown Sugar
1/3 c. finely chopped black walnut

Muffin Batter:
1 c. Whole Wheat Flour
1 c. Flour
1/3 c. Sugar
2 t. Baking Powder
1 t. Baking Soda
1 t. Pumpkin Pie Spice
¼ t. Salt
2/3 c. Mashed Pumpkin
1/3 c. Molasses
1/3 c. oil
2 eggs
¼ c. Milk
1 t. Vanilla

Mix all the topping ingredients in a small bowl, to a crumbly form.
Set aside.
Heat oven to 400.
Grease muffin pan
In a large bowl, mix flours, sugar, baking powder, baking soda,
Spice and salt. Set aside. In a small bowl, mix together pumpkin, molasses,
Oil, eggs, milk and vanilla.
Pour liquid ingredients into dry. Blend.
Spoon batter into muffin cups.
Top with Black Walnut topping.
Bake for 15 minutes.
Cool for 10 minutes then remove from pan.
